Everything is baked once, before six. The counts fall through the day as things sell, and when a line is struck through it is struck through until tomorrow.
About us
Ninth & Rye has stood on Warren Street since 2016, when the oven was lit with a starter carried up from a kitchen in Brooklyn. That same starter is fed twice a day and still does all the lifting.
We bake once. Everything you see came out between four and six this morning, and nothing goes back in. It means we run out, often by early afternoon, and we would rather run out than hold bread over.
Four ingredients go into the loaves: flour, water, salt, leaven. The pastry adds butter and not much else.
